Keto Cheese and Broccoli Soup Recipe that is low carb and tastes great. Very easy and quick to make with purchased precut ingredients.
Ingredients:
- 1 Tablespoon olive oil
- 3 Tablespoons butter
- 2 Ounces of onion, chopped
- 18 Ounces of broccoli, finely chopped from the top down to stalk
- 4 Ounces of garlic, minced
- Salt, to taste
- 1/2 teaspoon of pepper
- 2 Cups chicken, bone or vegetable broth
- 3/4 Cup of heavy cream
- 1/2 Cup of cheddar cheese, grated

Instructions:
- Heat up 1 tablespoon of olive oil and 1 tablespoon of butter in a saucepan. Once hot, add in the onion and the broccoli stalks. Cook over medium heat until the onion starts to brown, then add-in the garlic.
- Once the veggies start to color, season with salt, pepper, paprika and cayenne pepper and cook out the spices for a minute. Deglaze with chicken or vegetable stock, or water, then cover and cook for 5 minutes.
- Transfer the contents of the saucepan to a food processor and blend with the liquid until you get a smooth and creamy soup.
- In the same pan, heat the remaining butter and fry the broccoli florets, without stirring, for a seared outside.
- Pour the blended soup mixture through a sieve into the pot. For clunkier soup, do not strain the soup.
- Allow the mixture to come to a boil, then simmer for a few minutes. Add in the heavy cream and cheese and mix well.
- Cook until all the cheese melts. If desired, blend the soup further. Serve hot.
