Delicious and Healthy Keto Broccoli and Cheese Pizza Recipe

Ingredients:

  • 1 head of broccoli, cut into florets
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Place the broccoli florets in a food processor and pulse until they resemble rice-like grains.
  3. Transfer the broccoli rice to a microwave-safe bowl and microwave for 4-5 minutes, or until softened.
  4. Place the cooked broccoli rice in a clean kitchen towel and squeeze out any excess moisture.
  5. In a large bowl, combine the broccoli rice, shredded mozzarella cheese, Parmesan cheese, eggs, garlic powder, dried oregano, salt, and black pepper. Mix well.
  6. Line a baking sheet with parchment paper and spread the broccoli mixture into a thin, even layer.
  7. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and crispy.
  8. Remove from the oven and let it cool for a few minutes before slicing.
