Keto Cauliflower Mac And Cheese Bake

Cauliflower mac and cheese is one of my all-time favorites!  What sets this recipe apart from all the other Keto Cauliflower mac and cheese recipes? It has powdered cheese that will take you right back to how mac and cheese tasted when you were a kid, but healthier! I use Hoosier Farm Cheddar Cheese Powder, it is the closest match to that original cheese powder you knew as a kid.

Ingredients:

7 cups roughly chopped cauliflower, (about one extra large head)

1/2 tsp. garlic powder

1/2 tsp. onion powder

1/2 cup whipped cream cheese

1/4 cup cheddar cheese powder

2 Tbsp. light sour cream

1 Tbsp. light butter

1/8 tsp. salt

1/8 tsp. black pepper

2 Tbsp. shredded reduced-fat chedder cheese

1/2 oz. (about 2 Tbsp.) unsalted roasted cashews, finely chopped.

I also top with chives.

Instructions:

  1. Preheat oven 425 degrees. Spray a baking sheet and an 8″ x 8″ baking pan with nonstick spray.
  2. Place cauliflower on the baking sheet, and lightly spray with nonstick spray. Top with garlic powder and onion powder. Bake until tender and lightly browned. (about 25 mins.)
  3. In a large bowl, combine cream cheese, cheese powder, sour cheese, butter, salt, and pepper. Stir until mostly smooth and uniform. Add cooked cauliflower, and thoroughly stir to coat.
  4. Transfer the cauliflower mixture to the baking pan. Top with shredded cheese and cashews. Bake until the cheese has melted
